Turkey Burgers with Papaya-Mango Salsa

My wife has been asking me to do something with ground turkey. So I tried these turkey burgers. Man they were pretty good. Seasoning and the salsa were excellent. The only thing that I would change would be I would leave out the cilantro from the salsa. I don't care for it very much and my wife doesn't like it at all. However, I always try to make something the first time exactly as the recipe states then if its good I can tweak it the next go around.

Baked Chicken and Pasta

For Jackie's birthday I made a family favorite of ours. Baked chicken and pasta. Its very tasty. The recipe calls for shredded mozzarella cheese. However, I like to use fresh whole mozzarella that I cube and put in to get it that ooey gooey stringy cheese look and taste. This time however I used wheat pasta. I didn't care for this as much. Bad to the normal shells next time.

The other day I made garlic chicken and rice. It was pretty good, seemed to need something to make it better. Maybe some additional salt, however that would negate the recipe. Catherine gave me this one to try off the WW website.

Grilled Peaches

Catherine didn't want cake for her birthday dessert. Instead requested grilled peaches. Never having grilled fruit before. I thought this was an awesome idea. Turned out well also. Grilling it warmed it up and with the cream cheese, honey, and sour cream topping. It was a sweet tooth's cravings cure.

Raspberry Chipotle Pork Loin

George and Sarah came over for Catherine's birthday. We wanted to use a pork tenderloin that we had in the freezer. So, I made a fresh raspberry and chipotle glaze for the pork. I was pretty good. It was strange to taste berries while eating meat, but in a good way. I made garlic and cheddar mashed potatoes and parmesan green beans as sides. The green beans were awesome. I will definitely be making them again. Everyone liked all the dishes.

Tomato Pea Pasta with Shrimp

Tonight, I tried something a little different. Pasta with a mild tomato sauce with carrots, shallots, garlic and peas. It was very good. I changed the recipe a little to better soot my wife's diet. I took out some of the olive oil and half the cheese that was to be in it. I did add some sauteed shrimp to the top. I think that I would skip that in the future. It wasn't needed.

All in all it was very good but I felt that it needed something, the flavor was good but it seemed to be a little bland. Maybe I just like robust flavors. I would make this again. Even my 9 month old really enjoyed it.

Sweet & Sour Chicken

Last night, homemade sweet and sour chicken was consumed. It was very tasty. It was a big hit, my wife and daughter loved it. I will definitely be making this one again. I wouldn't really change anything with this recipe. It was pretty much about perfect. I think that I will try to add some heat to it next time. Not sure about you but all Chinese food should be spicy, IMHO. :)

Steak and Shrimp Paella


Tried my hand at a Paella a while back. I really liked it although it was sorta salty. The flavor was very strong but not in a bad way. It was a really good experiment and I look forward to making it again.

New beginnings

My wife said to me one day that I should blog about some of the things that I cook. I thought about it and its a good idea. I will be able to look back and see how things turned out. Review it and add customizations to the recipes.

I'll start with something that I don't enjoy eating but my wife does. This is a tofu dish that I made the other day that she really enjoyed.
